Ingredients
  

  • 1/2 cup diced red or green bell pepper
  • 1/2 cup diced onion
  • 1 cup frozen corn
  • 1, 15 oz can of black beans rinsed and drained
  • 1 to 2 boneless good sized skinless chicken breast halves
  • 1, 4 oz can green chilies
  • 1, 8 oz can tomato sauce
  • 1, 14.5 oz can diced tomatoes not drained
  • 1 teas cumin
  • 2 teas chili powder
  • 1/2 teas garlic powder
  • 6 cups chicken broth
  • 1 teas salt kosher is best
  • 2 tablespoons cilantro leaves chopped
  • tortilla strips or corn chips
  • Sliced Avocado shredded cheese, sour cream for toppings
  • Place the bell pepper onion, corn, black beans, chicken, green chilies, tomato sauce, diced tomatoes, cumin, chili powder, garlic powder, chicken broth and salt into a crock pot. Combine well.
  • Cover and cook on on for 4 hours or LOW for 6 to 8 hours.
  • Remove the chicken breasts and shred using two forks.
  • Put the chicken back in the pot.
  • Add the chopped cilantro and stir to combine.
  • Put in bowls.
  • Enjoy!

Notes

Top off with tortilla strips, corn chips, and any of your favorite toppings.
