Roasted Beets with Oranges

Ingredients
  

  • 2 pounds trimmed beets
  • 2 tbls extra-virgin olive oil
  • 4 teas sherry or plain white vinegar
  • 1 orange navel or Cara Cara
  • 2 cups baby arugula
  • 2 oz goat cheese
  • 2 tbls sliced or diced almonds
  • Salt and pepper to taste

Instructions
 

  • Put oven rack to middle position and preheat to 400 degrees.
  • Wrap beets in aluminum foil (individually) and place on baking sheet.
  • Roast beets for 50 to 60 minutes until fork can be inserted with little resistance (unwrap to test).
  • Remove beets from oven and carefully remove foil.
  • When the beets are cool enough to handle, rub off the skin with a paper towel.
  • Cut beets into bite-sized pieces.
  • Whisk together the oil, vinegar, salt and pepper (about 14 teaspoon each) in a large bowl. Add in the beets, toss to coat, and let stand at room temperature for about 20 minutes.
  • Remove pith and peel from the orange and cut into bite-sized pieces.
  • Add the arugula and orange pieces to the beets and toss gently.
  • Place in a serving dish and sprinkle with goat cheese and almonds.
