Easy Spicy Black Bean Soup

Ingredients

    • 1 tsp extra virgin olive oil
    • ½ onion
    • 2 cloves garlic
    • 1 red bell pepper
    • 1 can black beans 15oz
    • 8.5 oz vegetable broth
    • ¼ cup cilantro and coriander fresh
    • ¼ tsp cumin ground
    • ¼ tsp red pepper flakes to taste
    • 1 tbsp balsamic vinegar
    • ½ avocado

    Instructions
     

    • Finely dice the onion and garlic. Add both to the pot and simmer on low heat.
    • Cut the bell pepper into small pieces and add to the pot.
    • Rinse and drain the black beans.
    • Squash a few black beans with a fork (or put some of the beans in a blender) to give the soup a creamy consistency, then add to the pot.
    • Add the vegetable broth.
    • Chop the cilantro and add it to the soup (holding some in reserve for garnish).
    • Add the cumin, balsamic vinegar, and red pepper flakes.
    • Simmer for approximately 10 minutes.
    • Prepare avocado slices and warm up the tortillas.

    Notes

    Top with a dollop of sour cream or Greek yogurt, and add chopped avocado for the perfect finishing touch.
