Instructions
Finely dice the onion and garlic. Add both to the pot and simmer on low heat.
Cut the bell pepper into small pieces and add to the pot.
Rinse and drain the black beans.
Squash a few black beans with a fork (or put some of the beans in a blender) to give the soup a creamy consistency, then add to the pot.
Add the vegetable broth.
Chop the cilantro and add it to the soup (holding some in reserve for garnish).
Add the cumin, balsamic vinegar, and red pepper flakes.
Simmer for approximately 10 minutes.
Prepare avocado slices and warm up the tortillas.
Notes
Top with a dollop of sour cream or Greek yogurt, and add chopped avocado for the perfect finishing touch.
