CrockPot Chicken Tortilla Soup
This easy Chicken Tortilla Soup recipe is a delightful comfort food, brimming with flavor and simple to prepare.
Ingredients
- 1/2 cup diced red or green bell pepper
- 1/2 cup diced onion
- 1 cup frozen corn
- 1, 15 oz can of black beans rinsed and drained
- 1 to 2 boneless good sized skinless chicken breast halves
- 1, 4 oz can green chilies
- 1, 8 oz can tomato sauce
- 1, 14.5 oz can diced tomatoes not drained
- 1 teas cumin
- 2 teas chili powder
- 1/2 teas garlic powder
- 6 cups chicken broth
- 1 teas salt kosher is best
- 2 tablespoons cilantro leaves chopped
- tortilla strips or corn chips
- Sliced Avocado shredded cheese, sour cream for toppings
- Place the bell pepper onion, corn, black beans, chicken, green chilies, tomato sauce, diced tomatoes, cumin, chili powder, garlic powder, chicken broth and salt into a crock pot. Combine well.
- Cover and cook on on for 4 hours or LOW for 6 to 8 hours.
- Remove the chicken breasts and shred using two forks.
- Put the chicken back in the pot.
- Add the chopped cilantro and stir to combine.
- Put in bowls.
- Enjoy!
Notes
Top off with tortilla strips, corn chips, and any of your favorite toppings.
