Soft Molasses Cookies

These soft molasses cookies (My grandma's specialty) are packed with flavor that bring a smile to every bite. My son loves these cookies!

Ingredients
  

  • 1 cup dark brown sugar
  • 1 cup butter softened
  • 1/4 cup Dark Molasses
  • 1 large egg
  • 1 Teas vanilla extract
  • 2 1/2 cups flour all purpose
  • 2 teas baking soda
  • 1 teas ground ginger
  • 1 teas ground cinnamon
  • 1 teas nutmeg
  • 1/2 teas salt
  • 1/4 cup granulated sugar to roll cookie dough in

Instructions
 

  • Preheat oven to 325 degrees.
  • Place parchment paper on a large baking sheet and set aside. If you don't have parchment paper, spray the baking sheet with cooking spray.
  • In a large bowl, beat together the brown sugar, butter, molasses, egg, and vanilla extract with a mixer until well combined.
  • Mix together the flour, baking soda, cinnamon, ginger, and salt and add to ingredients above.
  • Shape the dough into 1 to 1 1/2 inch balls.
  • Roll the balls in granulated sugar
  • Place cookie dough balls 2 inches apart on the baking sheet.
  • Bake for 10 to 15 minutes until set.
  • Remove cookies and place on a wire rack to cool.
