Preheat oven to 325 degrees.
Place parchment paper on a large baking sheet and set aside. If you don't have parchment paper, spray the baking sheet with cooking spray.
In a large bowl, beat together the brown sugar, butter, molasses, egg, and vanilla extract with a mixer until well combined.
Mix together the flour, baking soda, cinnamon, ginger, and salt and add to ingredients above.
Shape the dough into 1 to 1 1/2 inch balls.
Roll the balls in granulated sugar
Place cookie dough balls 2 inches apart on the baking sheet.
Bake for 10 to 15 minutes until set.
Remove cookies and place on a wire rack to cool.
