Roasted Beets with Oranges
Yummy roasted beets recipe - a delish, healthy side.
Ingredients
- 2 pounds trimmed beets
- 2 tbls extra-virgin olive oil
- 4 teas sherry or plain white vinegar
- 1 orange navel or Cara Cara
- 2 cups baby arugula
- 2 oz goat cheese
- 2 tbls sliced or diced almonds
- Salt and pepper to taste
Instructions
- Put oven rack to middle position and preheat to 400 degrees.
- Wrap beets in aluminum foil (individually) and place on baking sheet.
- Roast beets for 50 to 60 minutes until fork can be inserted with little resistance (unwrap to test).
- Remove beets from oven and carefully remove foil.
- When the beets are cool enough to handle, rub off the skin with a paper towel.
- Cut beets into bite-sized pieces.
- Whisk together the oil, vinegar, salt and pepper (about 14 teaspoon each) in a large bowl. Add in the beets, toss to coat, and let stand at room temperature for about 20 minutes.
- Remove pith and peel from the orange and cut into bite-sized pieces.
- Add the arugula and orange pieces to the beets and toss gently.
- Place in a serving dish and sprinkle with goat cheese and almonds.
