Easy Spicy Black Bean Soup

- 1 tsp extra virgin olive oil
- ½ onion
- 2 cloves garlic
- 1 red bell pepper
- 1 can black beans 15oz
- 8.5 oz vegetable broth
- ¼ cup cilantro and coriander fresh
- ¼ tsp cumin ground
- ¼ tsp red pepper flakes to taste
- 1 tbsp balsamic vinegar
- ½ avocado
Instructions
- Finely dice the onion and garlic. Add both to the pot and simmer on low heat.
- Cut the bell pepper into small pieces and add to the pot.
- Rinse and drain the black beans.
- Squash a few black beans with a fork (or put some of the beans in a blender) to give the soup a creamy consistency, then add to the pot.
- Add the vegetable broth.
- Chop the cilantro and add it to the soup (holding some in reserve for garnish).
- Add the cumin, balsamic vinegar, and red pepper flakes.
- Simmer for approximately 10 minutes.
- Prepare avocado slices and warm up the tortillas.
Notes
Top with a dollop of sour cream or Greek yogurt, and add chopped avocado for the perfect finishing touch.
