Spicy Avocado Lime Chicken Soup
Delicious, spicy soup that's full of flavor. The avocado adds a wonderful, creamy texture.
Ingredients
- 2 boneless skinless, chicken breasts
- 1 tablespoon olive oil
- 1 white onion chopped and divided
- 3 limes juiced
- 1 cup cilantro chopped and divided
- 2 jalapeno peppers cut in half and thinly sliced
- 3 cloves garlic minced
- 4 cups water
- 2 tablespoons low sodium chicken bouillon
- 3 large ripe but firm, avocados cut into chunks
- Add white rice when serving optional.
Instructions
- Bring a small pot of water to a boil.
- Add chicken and boil for 5 to 8 minutes. Drain.
- Run cool water over chicken to speed cooling process.
- Shred or finely slice chicken.
- Heat olive oil in a large pot over medium heat.
- Add 1/2 onion, lime juice, 1/2 cup cilantro, jalapeno peppers, and garlic and cook about 5 minutes, or until the onion is opaque in color.
- Combine the 4 cups water and bouillon powder in a bowl.
- Pour into the pot.
- Cook for 5 minutes or until just heated through.
- Stir in chicken
- Ladle the soup into bowls.
- Top with remaining onion, avocado, cilantro.
Notes
Top off with crispy tortilla strips (or crushed tortilla chips), queso fresco to taste, or sour cream. You can also add a little pre-cooked rice to the soup, or put leftover soup over rice.
