Honey Roasted Carrots

Flavors abound in tasty side dish.  The cumin and honey set of the taste of fresh carrots.

Ingredients
  

  • 12 medium/large carrots peeled and cut diagonally into 1/2 inch pieces
  • 1/4 cup of honey
  • 2 tablespoons of olive oil
  • 1/2 teaspoon of ground cumin
  • Fresh chopped parsley (optional)
  • Salt and ground black pepper to taste

Instructions
 

  • Preheat oven to 400 degrees
  • Put carrots into a large resealable plastic bag
  • Add olive oil, honey, cumin, salt and pepper
  • Seal bag and thoroughly coast carrots
  • Put into a cookie sheet and lay out evenly
  • Roast in oven until just tender, 30 to 40 minutes.
