- 1 package Hambeens 15 bean soup
- 1 tbls olive oil
- 1 medium onion diced
- 1 cup celery about 2 stalks, diced
- 3 carrots diced
- 2 cups ham ham bone or ham hock
- 1 bay leaf
- 4 cups water
- 4 cups chicken broth
- Juice of 1 lemon
- 14 oz diced tomatoes with juice
- Rinse beans and drain.
- Sort any unwanted debris and set seasoning packet aside.
- Turn Instant Pot on saute.
- Add olive oil and onion. Saute until tender about 4 minutes.
- Add all ingredients except the lemon juice and tomatoes and stir.
- Place the lid on and cook on high pressure for 60 minutes.
- Quick release pressure.
- Open the lid and remove ham bone or hock if used.
- Add the lemon juice and tomatoes.
- Turn on saute again and simmer to reheat.
- Stir serve and enjoy.
