Glazed Banana Eggnog Bread
This delicious glazed banana eggnog bread is perfect for the holidays.
Equipment
- Bread pan Standard size or you can use smaller ones that you can give as gifts.
Ingredients
- 4 ripe bananas medium size
- 1/2 cup canola or refined coconut oil room temperature
- 2 large eggs
- 1/2 cup eggnog
- 1 teas vanilla extract
- 1/2 cup light brown sugar
- 1/4 cup granulated sugar
- 2 1/4 cups all-purpose flour
- 2 teas ground cinnamon
- 1/2 tea ground nutmeg
- 1 teas baking powder
- 1/2 teas baking soda
- 1/4 teas salt
Glaze
- 2 cups powdered sugar
- 1/2 teas ground cinnamon
- 1 pinch ground nutmeg
- 6-8 tbls eggnog
Instructions
- Preheat the oven to 350 degrees.
- Grease a standard-size bread loaf pan and set aside.
- Peel the bananas, add them to a large mixing bowl and mash with a fork.
- Add the granulated sugar, brown sugar, oil, eggs, eggnog, and vanilla extract.
- Whisk everything together. Avoid overmixing. You can use an electric mixer if you prefer.
- Add in the flour, salt, spices, baking soda, and baking powder.
- Mix everything together and pour the batter into the greased bread loaf pan.
- Put into the oven and bake for about 60 to 70i minutes, or until a toothpick inserted comes out clean.
- Remove from the oven and leave in the bread pan for about 15 minutes.
- Remove the bread from the pan and let it cool on a cooling rack.
Instructions for Glaze
- Add powdered sugar and spices to a medium-sized bowl and mix with a fork.
- Add eggnog into the bowl and whisk together. For a thicker glaze, add less eggnog. Add more eggnog for a thinner glaze.
- Wait until the bread has cooled completely before drizzling the glaze on top.
- Allow the glaze to cool completely so that it hardens. Slice and enjoy!
