Cabbage Roll Casserole
Ready to whip up something awesome? Turn your classic cabbage roll fav into a super easy casserole. It’s like the traditional rolls got a lazy makeover – in a good way!
Ingredients
- 1 head cabbage chopped
- 2 tbsp. extra-virgin olive oil
- 1 white onion chopped
- 3 cloves garlic minced
- 2 pound ground beef
- 1 can tomato sauce 29 ounce
- 1 can chopped tomatoes 14.5-oz. (optional)
- 1 cup white rice
- 2 14 ounce cans chicken broth low sodium
Instructions
- Preheat oven to 350 degrees
- In a large skillet, brown ground beef in olive oil over until pink is gone. Drain fat.
- In a large mixing bowl combine the onion, garlic tomato sauce, diced tomatoes, cabbage, uncooked rice, salt and pepper.
- Add ground beef and mix all together. Pour mixture into a 9x13 inch baking dish.
- Pour broth over mixture and bake, covered with foil, for 1 hour.
- Stir, cover and bake for an additional 30 minutes, or until rice is soft
