Honey Roasted Carrots

Flavors abound in tasty side dish.  The cumin and honey set of the taste of fresh carrots.

  • Yields: 4 servings


12 medium/large carrots, peeled and cut diagonally into 1/2 inch pieces

1/4 cup of honey

2 tablespoons of olive oil

1/2 teaspoon of ground cumin

Fresh, chopped parsley (optional)

Salt and ground black pepper to taste


1Preheat oven to 400 degrees

2Put carrots into a large resealable plastic bag

3Add olive oil, honey, cumin, salt and pepper

4Seal bag and thoroughly coast carrots

5Put into a cookie sheet and lay out evenly

6Roast in oven until just tender, 30 to 40 minutes.
