A friend told me about this recipe, saying it's "Oh So Good" and easy.

  • Cook: 30 mins
  • Yields: 4 servings

3 tablespoons Dijon mustard

1/2 cup light mayonnaise

1 medium lemon, zested and juiced

2 teaspoons dried tarragon

16 spears fresh asparagus, trimmed

4 boneless, skinless chicken breast halves

4 slices provolone cheese

1 cup of panko bread crumbs

2Preheat oven to 475 degrees

3Grease a baking dish with extra virgin olive oil.

4In a bowl, mix together the Dijon mustard, mayonnaise, lemon juice and zest, salt, pepper and tarragon, until well combined.

5Cook the asparagus on high in the microwave until just (about 1 to 1 1/2 minutes).

6Put the chicken in a large freezer bad on a level surface.

7Pound the chicken breasts with a mallet until it's around 1/4 inch thick.

8Place a single slice of provolone on each chicken breast

9Add 4 spears of asparagus spears per breast.

10Roll up the chicken breasts around the cheese and asparagus.

11Put the roll ups, seam sides down, in a prepared baking dish.

12Apply a coating of the mustard/mayonnaise mixture to each chicken breast with a pastry brush.

13Sprinkle with panko crumbs, pressing the it into the chicken.

14Bake until the panko crumbs are browned and the juices run clear (approximately 30 minutes).
