0 Full-screen Oh So Good Asparagus/Chicken Roll Ups April 10, 2019 A friend told me about this recipe, saying it's "Oh So Good" and easy. Prep: 20 mins Cook: 30 mins Yields: 4 servings Ingredients 3 tablespoons Dijon mustard 1/2 cup light mayonnaise 1 medium lemon, zested and juiced 1/2 teaspoon salt 1 teaspoon ground black pepper 2 teaspoons dried tarragon 16 spears fresh asparagus, trimmed 4 boneless, skinless chicken breast halves 4 slices provolone cheese 1 cup of panko bread crumbs Directions 1Directions 2Preheat oven to 475 degrees 3Grease a baking dish with extra virgin olive oil. 4In a bowl, mix together the Dijon mustard, mayonnaise, lemon juice and zest, salt, pepper and tarragon, until well combined. 5Cook the asparagus on high in the microwave until just (about 1 to 1 1/2 minutes). 6Put the chicken in a large freezer bad on a level surface. 7Pound the chicken breasts with a mallet until it's around 1/4 inch thick. 8Place a single slice of provolone on each chicken breast 9Add 4 spears of asparagus spears per breast. 10Roll up the chicken breasts around the cheese and asparagus. 11Put the roll ups, seam sides down, in a prepared baking dish. 12Apply a coating of the mustard/mayonnaise mixture to each chicken breast with a pastry brush. 13Sprinkle with panko crumbs, pressing the it into the chicken. 14Bake until the panko crumbs are browned and the juices run clear (approximately 30 minutes). close full screen 00:00 0 Reviews Cancel replyYou must be logged in to post a comment.
