Honey Mustard Chicken

This is an boneless chicken breast recipe with a lot of flavor.

4 tbls olive oil

2 tbls whole grain mustard

1 tbls mild (and smooth) Dijon mustard

3 tbls honey

1/2 teas paprika

4 cloves garlic minced

2 tbls fresh lemon juice

2 pounds skinless, boneless chicken breasts, (4 good sized chicken breasts)

Salt and black pepper

Garnish with fresh chopped parsley

Serve with lemon wedges


1Preheat oven to 400

2Line a baking sheet with foil and lightly grease.

3Combine the oil, honey, the two mustards, honey, paprika, minced garlic and lemon juice in a small bowl to combine well.

4Put the chicken onto the prepared baking sheet.

5Season with salt and pepper.

6 Evenly spoon 3/4 of the prepared mixture over the chicken and spread evenly.

7Pour 1/4 cup water onto baking sheet creating a sauce and to prevent burning.

8Bake until cooked through (about 30 minutes).

9 Spoon the rest of the sauce over each breast and grill or broil for approximately 5 on medium-high heat to brown, caramelizing the edges.

10Cover with foil and let rest for about 10 minutes.

11Garnish with parsley and arrange the lemon wedges on the service dish with the chicken.

Great served with rice or mashed potatoes, green beans, asparagus or cauliflower.
