Garbanzo Bean Soup

You'll love this delicious Mediterranean garbanzo bean soup, full of healthy ingredients.

2 tablespoons extra virgin olive oil

1 medium onion, chopped

2 stalks celery, chopped

1 red pepper, chopped

3 medium carrots, chopped

4 cloves garlic, minced

1/2 pound green beans, trimmed and cut into 1-inch pieces

1 28-ounce can chopped tomatoes

10 cups low-sodium chicken stock

2 cups cooked garbanzo beans

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon dried rosemary

1 bay leaf

1 teaspoon salt

1/2 teaspoon black pepper


1Preheat olive oil in a large soup pot

2Put the onion, celery, red pepper, carrots, garlic, into the pot and saute for approximately 10 minutes.

3Add green beans, tomatoes, garbanzo beans, basil, rosemary, oregano, bay leaf, salt, pepper and chicken stock..

4Stir well to combine the ingredients and bring to a boil.

5Lower the heat, cover, and simmer for about 30 minutes.

6Salt and pepper to taste

7Fill soup bowls and add your favorite garnish (pesto, sour cream, cubed avocado, cilantro, etc.)

8Serve immediately.
