Cabbage Roll Casserole

Tastes like Stuffed cabbage rolls but is less time consuming to make.

1 head cabbage, chopped

2 tbsp. extra-virgin olive oil

1 white onion, chopped

3 cloves garlic, minced

2 pound ground beef

1 can tomato sauce (29 ounce)

1 can chopped tomatoes (14.5-oz.) (optional)

1 cup white rice

2 14 ounce cans chicken broth (low sodium)


1Preheat oven to 350 degrees

2In a large skillet, brown ground beef in olive oil over until pink is gone. Drain fat.

3In a large mixing bowl combine the onion, garlic tomato sauce, diced tomatoes, cabbage, uncooked rice, salt and pepper.

4Add ground beef and mix all together. Pour mixture into a 9x13 inch baking dish.

5 Pour broth over mixture and bake, covered with foil, for 1 hour.

6Stir, cover and bake for an additional 30 minutes, or until rice is soft
